When life gives you frozen lemonade…

Almost 10 years ago, we traveled to Rhode Island to visit family. While we were there, my husband suggested that we find a Del’s Lemonade stand to try some frozen lemonade.

I’m up for anything frozen and sweet, and John always seems to have researched the best local foods wherever we go. So, we went to find a Del’s Lemonade, ordered some for each of us, and then started driving back to the house where we were staying.

Something happened, and we realized the paper cups of frozen lemonades were melting all over the place in the car. It was making a huge mess, and the car wasn’t even ours. We ended up throwing most of them away.

Fast forward a decade. One day last week, I happened to be at the store and saw a bottle of Del’s Lemonade. I brought it home, and as we drank it, we started reminiscing about our trip to Rhode Island.

We joked about ordering a case of lemonade. Then I did what you do in 2021 when there’s a pandemic that’s still hanging on. I googled Del’s Lemonade. I saw that you could order packets of lemonade.

I couldn’t resist. What did we have to lose?

I ordered a bucket of lemonade packets and forgot about it. Then it landed on our porch. And we realized that the packets made batches not just of ordinary lemonade—but frozen lemonade.

I’m not the most fun mom ever. But I’m a quick learner. And I can figure out how to throw ice, water, and a packet of lemon powder into a blender.

It’s not even the end of April, but I have a feeling that frozen lemonade is going to be one of our favorite Summer 2021 Treats. Or maybe we’ll enjoy so much of it this spring that we’ll be tired of it by the time we get to summer vacation.

It doesn’t matter. Life is short, and frozen lemonade was meant to be enjoyed. Let’s make another round.

Besides, it feels very special to find a few minutes during the day to make a quick, frozen treat. And with our boys still attending virtual school, they might as well be slurping down some lemony deliciousness during class.

Guzzling frozen lemonade won’t make summer come any faster. But somehow it makes me believe summertime might be just around the corner. And I do feel like some amazing chef when I walk out of the kitchen with tall glasses of frosty goodness.

And it sure is quicker than a trip to Rhode Island.
